  • Bean selection and roasting is a science in itself and as of recent, coffee has been compared to another popular beverage - wine. Both require a painstaking labor of love and in return offer us an intriguing world of flavors and aromas to explore. The beverages are parallel from differentiating between varietals, and preferences of specific regions, to a greater emphasis on the process and offering ‘cuppings’ to demonstrate the subtle flavor variances. The third wave of coffee has created an awareness in consumers, one of quality and sustainability and pleasure.

    Chiasso coffee arrives in our guests hand after a series of hand-offs from farmer to miller to roaster to barista, and the final experience is dependent on each individual doing their job to the best of their ability. In order to ensure that Chiasso beans are among the best in the world, we have employed the expertise of John Sanders with Origins Organic Coffee on Granville Island, BC. John is a veritable coffee genius, and he spends over 100 days a year traveling in search of the perfect farms, bean varietals, and innovations to make his coffee inventory one to be reckoned with. John is actively involved in both the World Barista Championship Technical Standards Committee and the Specialty Coffee Association of America Technical Standards Committee – he is the guy who taught the other guys how things work in these parts.

    After John painstakingly selects the best quality organic, sustainably farmed green beans, they are slowly roasted by hand to the specific speed, temperature, and airflow which will best bring out their subtle nuances and aromas. This is where the parallels of coffee and wine diverge. Roasted coffee contains over 800 organic compounds that create each cups’ individual flavor – significantly more than wine. To understand this chemically complex substance, the roaster must be at one with his craft, with this we trust only Johns’ experience and commitment to ongoing evaluation. “Certifications are good.
