At Chiasso we have painstakingly learned and refined the coffee process from start to finish to deliver our guests with the perfect espresso shot every time. There are four crucial elements to creating the perfect Chiasso espresso shot. To begin, we start with expertly selected and roasted coffee beans; second, we work exclusively with the perfect grind; third, we house the world's best espresso machines and last but certainly not least, we select the very best talent and provide our people with industry leading training and development. The Machine
While much excitement surrounds the origin, roast and grind of the bean, the quest for the ultimate espresso is largely dependent on the machine and the baristas understanding of its capabilities. Each Chiasso store is equipped with custom-built espresso machines from La Marzocco, a company who shares our innate passion for coffee. For many espresso enthusiasts, a La Marzocco machine is a must-have to ensure espresso nirvana. Why? The company has a trademarked phrase: “There are reasons”.
Michelangelo, Da Vinci, Ferrari, Ducati. The Italians are known for their innovation and style. La Marzocco is one of the oldest manufacturers of traditional espresso machines in the world. With origins in Florence Italy, they have followed in these footsteps and earned a reputation the world over for making “beautiful, high-quality, superbly crafted and uniquely designed espresso machines”. Over their 80+ years, the company has maintained its custom-build, artisan approach combining traditional brewing methods with modern, advanced technology. This approach has resulted in numerous industry-changing innovations. One of the most obvious examples of this is its development of the revolutionary dual boiler system.
The dual boiler system gives La Marzocco machines something that almost no other commercial machine can lay claim to; when operating in commercial use, they are able to maintain less than +/- 0.5˚C variance in the brewing temperature, an industry record. Espresso machines have two primary functions; brewing espresso and steaming milk. High demands on the machine can upset the temperature stability of a single boiler, which can lead to bitter or scorched espresso. All La Marzocco espresso machines come standard with a dual boiler system - one boiler for extracting espresso, and another for steaming milk. Both boilers can operate simultaneously, but independently of each other, exerting closer control of the brewing temperature and ensuring perfect conditions for the perfect shot. Thermal stability and coffee quality is not compromised by the volume of a Chiasso cafe.
