With origins in Florence Italy, they have followed in these footsteps and earned a reputation the world over for making “beautiful, high-quality, superbly crafted and uniquely designed espresso machines”.     The dual boiler system gives La Marzocco machines something that almost no other commercial machine can lay claim to; when operating in commercial use, they are able to maintain less than +/- 0.5˚C variance in the brewing temperature, an industry record. Espresso machines have two primary functions; brewing espresso and steaming milk. High demands on the machine can upset the temperature stability of a single boiler, which can lead to bitter or scorched espresso. All La Marzocco espresso machines come standard with a dual boiler system - one boiler for extracting espresso, and another for steaming milk. Both boilers can operate simultaneously, but independently of each other, exerting closer control of the brewing temperature and ensuring perfect conditions for the perfect shot. Thermal stability and coffee quality is not compromised by the volume of a Chiasso cafe.
